The Dark and Stormy is a delicious cocktail featuring dark rum and ginger, both ginger syrup and ginger beer with a squeeze of lime. We first came across this drink on the Royal Caribbean Mariner of the Seas ship in their Bamboo Room. The bartenders showed me how to make it and then we modified it by adding ginger syrup to give it an even better ginger kick.
Ingredients
2 oz dark rum
1 oz ginger syrup (you can make this at home, recipe here)
Juice from 1/2 of a lime
Ginger beer
Instructions
Add ice to a cocktail shaker
Add all ingredients to the shaker except the ginger beer.
Shake well for at least 10 seconds
Strain into a Highball Glass, then add some of the ice from the cocktail shaker.
Top with ginger beer, use a bar spoon to gently mix the ginger beer into the drink.
